Sunday Project....

Hello all...
We've lived in our home going on seven years now. I originally wanted a pendant light over my kitchen sink, but there was no matching pendant available when selecting fixtures during the build, so I settled for a ceiling mounted"boobie" light. For whatever reason, the original light never worked properly (only one of the two bulbs illuminated). I found a very close pendant match at an online vendor and got the "go ahead" from my hubby...I was giddy with excitement (I'm a simple girl!!!). We installed the new fixture yesterday (02-27-12)  and I'm loving it...the installation process and hidden surprise, NOT SO MUCH!!! What we thought would be a fairly easy install turned out to be a royal pain and took much longer than planned. And that hidden surprise I mentioned...we found a lovely hole in the ceiling, an apparent "boo boo" by the electrician. SERIOUSLY!!!!! how could you just leave a gaping hole in someone's ceiling? If we EVER build again, I'm adding that to my lesson learned checklist...check all fixtures inside and out GRRRRRRRRRRRRRRR!!!!

Wishing you love...

Given that Valentine's Day falls during the thick of High School Baseball season, celebrations have been sparse in our house through the years. Lucky for me, love extends beyond one "special" day, into weeks, months, and years, becoming sweeter along the way. The scenario this year...my hubby's battling a cold, rescheduled a varsity scrimmage to this evening due to weather, made a post-practice ER visit to check on an injured player, and he still managed to come home with this beautiful Tulip arrangement last night, knowing  his schedule would be crazy for ♥ day. I've never seen an arrangement quite like it...beautiful Tulips inside a large glass vase. GORGEOUS as it is, knowing he was thinking of me during his crazy day is most precious!

"Hurry Up" Comfort Food...

The weather will be turning chilly in my neck of the woods later today...don't know about you, but when the temperature dips, nothing warms my soul more than a piping hot bowl of soup or stew! Thought I'd share a very quick and delish recipe for Chicken & Dumplin' Soup. Not only is it tasty, but it comes together in a flash. Rather than the canned vegetables, I use a **bag of frozen soup vegetables plus a handful or two of frozen green beans, *frozen, oven-roasted, diced chicken rather than cooking/shredding the chicken breasts (makes prep even faster), and add minced fresh Italian Parsley. My hubby and I love this yummy dish!

1 (10 3/4 oz) can Cream of Chicken Soup
4 c chicken broth
4 boneless, skinless chicken breasts, cooked and shredded*
2 (15 oz) cans mixed vegetables**
12 oz tube refrigerated biscuits, quartered
Optional black pepper to taste.

Combine soup and broth in a 6-quart stockpot; bring to a boil over medium-high heat, whisking until smooth. Stir in chicken and vegetables; bring to a boil. Drop biscuit quarters into soup; cover and simmer 15 minutes. Let soup sit 10 minutes before serving. Sprinkle each serving with pepper, if desired. Serves 6 to 8
